How to season and care for cast iron cookware

Kitchen:   Heat a skillet over high heat in a clean burner until smoking hot. Add a few tablespoons of oil tasteless and rub evenly over the entire inner surface of the pan. Remove from heat and let stand to cool completely.

Oven: Preheat oven to 350F. Rub all interior surfaces of the mold with oil neutral taste and bake for 1 hour. Turn off the oven and let pan in the oven until completely cold.

Cleaning: Wash the pan with warm water and dry with a soft sponge. Use soap only when necessary. If food pieces are hung, with a non-abrasive exfoliating sponge and a little coarse salt scrub to remove kosher and bits. Rinse and dry thoroughly, and rub oil layer on the inside of the pan. Store in a dry place.

Important Note: Do not leave pan sitting in the water or air dry.

  • Two bone rib eye steaks, slightly more than every £ 1 to 1 1/2 inch thick
  • Olive oil for cooking
  • Salt and pepper for seasoning
  • 4 cloves garlic, minced
  • 6 sprigs of fresh herbs, such as thyme, rosemary, marjoram or oregano

Remove the steaks from the refrigerator and let it sit at room temperature between 30 and 40 minutes.

Heat a large cast iron skillet over high heat until very hot. Add a tablespoon of oil and allowed 15 seconds to heat.

Top Side Season steaks with a generous amount of salt and in the pan, salt back. Release the trigger until dark crust 3-4 minutes. Other meat and season with salt and pages return. Grind fresh black pepper over the steaks.

Add garlic and herbs broken branches, while steaks to brown, 3 Minutes pan. Check frequently that garlic does not burn. As it turns brown, transfer to steaks. Tilt the pan and pour the juice over fillets.

Preheat oven to 375F. The dish with steak in the oven for 7-8 minutes at medium or medium 9-10 minutes.

Transfer meat to a cutting board to rest 10 minutes before carving. Pour gravy while silver fillet.

Roasted Asparagus
Serves 3-4

  • 1 ½ pounds thinner green asparagus
  • Olive oil
  • Salt and pepper
  • 1 lemon

Cut the asparagus tips as you want and place in a large bowl. Drizzle with olive oil, salt and pepper.

Brush the surface of cast iron grill with oil and place over high heat until very hot. Add as many stalks of asparagus that fits unaffected. Boil without stirring for about 1 minute. Turn the stems and cook on the other side for a minute. As asparagus is soft to remove a disk. Repeat with the remaining asparagus. Note that if the stems are strong that require more cooking time.

Before serving asparagus with a little olive oil and grated lemon peel with a Microplane at the top.
