Practical advice for a clean, clean and hygienic restaurant.

Even a single sign indicating an unhygienic environment or lack of cleanliness can cause great damage to the restaurant. Make sure your restaurant is hygienic by saving space and applying hygiene rules and procedures that your employees can easily comply with.

Here are some tips that can help keep the restaurant clean and hygienic.

Health check of the staff

  • The most basic cleaning and hygiene practice you can perform as a restaurant owner is to perform the medical check-up.
  • Make sure you pass the health exam before starting to work in the kitchen. All employees who deal with food directly must undergo a semi-annual medical examination.
  • All employees must undergo compulsory training in food health and personal hygiene requirements in food production.

Personal hygiene measures

  • Employees must have a two-piece locker where they can store their work clothes and normal clothing separately.
  • The work clothes must be changed regularly.
  • The nails of the employees should be cut and cleaned.
  • Employees must wear personal clothing in their work clothes.
  • The staff must use mosquito nets that cover all hair so they do not fall into the food. The nets must be used before entering the kitchen.
  • Employees should wash their hands frequently. Rubber gloves are essential when washing dishes.
  • Protective aprons should be used for food processing or dishwashing.
  • Ban smoking in the kitchen and adjacent areas.
  • Injuries such as cuts and scratches should be adequately protected and covered with waterproof tape. Gloves should be used as an extra precaution.
  • Make sure the staff in the kitchen does not eat.
  • Personnel should wear disposable gloves when working with perishable foods and high-risk foods.

Eliminate rodents and pests.

If customers notice pests, it will damage their reputation and they will think twice before returning to their restaurant. If there are complaints about parasites or rodents in the restaurant or if dead insects are found in the food, they are sanctioned by the regulatory authorities. The presence of rodents such as mice, cockroaches and flies indicates an unhealthy environment in the restaurant. If you notice parasites or rodents, call an exterminator immediately.

Perform a regular cleaning program.

  • Clean the accumulated fat on the grill and fryer.
  • Make sure carpets, curtains, and linens are clean and stain free. Wash laundry with high-pressure cleaner or steam extraction. Vacuum the carpets and make sure that the curtains are washed regularly.
  • Clean all utensils and cutlery. Disinfect them to remove bacteria.
  • Thoroughly clean the floor and apply a non-slip layer to prevent the workers from slipping off.
  • Clean the fridge and freezer regularly. Check the expiry date of items stored in the refrigerator. Wipe the outside with a damp cloth.
  • Clean bathrooms and bathrooms every hour. Use a disinfectant to clean the toilet.
  • If devices, hoses or taps are defective, repair them immediately.
  • The water pipes must function properly without dripping or soiling.
  • Clean the containers inside and out. Remember to wash them thoroughly to make sure any garbage is removed as it can attract pests and rodents.
  • Raw foods, especially meat and vegetables, should always be stored separately.
